Brandy Truffles Recipe
Recipe for Jaffa the Pastry Chef’s Brandy Truffles
Jaffa’s infamous puddings perfectly round off most meals at The Olde Bell (after all, who is strong enough to resist?). Enjoy a piece of The Olde Bell at home by making some handmade Brandy Truffles. The following recipe makes 20 – 30 2cm by 1cm rectangles.
450g 70% dark chocolate
335g double cream
50g brandy
35g glucose
1 vanilla pod
75g diced cold butter
Method
Flame the brandy in a pan and add the glucose, cream and vanilla
Bring to a simmer and pour over the chocolate in a bowl and whisk until melted
Leave to cool until about 40 degrees and whisk in the butter until emulsified
Pour the mix into a 15 – 20cm lined baking tray and leave to cool
Once cool place in fridge to firm up
Remove from fridge and place onto a cold chopping board
Cut into 2cm by 1cm rectangles and dust in cocoa powder, place onto a serving plate and watch them disappear !!!
